Feta Wild Rocket Tart & Strawberry Short Cake with White Liquorice Ice Cream for Dessert | Raw

Feta-Wild-Rocket-Tart-1

Another combo meal. And no, this is not part of my childhood...simply part of my typical eating habits!

I think I'm enjoying giving out two recipes per post...it just makes sense to have a light lunch followed by a decadent dessert and then a nap on this wonderful summer day!

Again, have a look at the tart recipe, just the base, and you'll recognise it...the only difference is that I added more flax meal, by one tbsp. Generally speaking, you can use this base recipe again and again for all of your savoury tart recipes... I want you to know this recipe like the back of your hand!

Also, the short bread recipe is very similar to the Carlton Tart pastry recipe. I want you guys to really grasp the fundamentals of these dishes, since many of my upcoming recipes have links to past ones. Soon it will start to make sense in a greater context and you'll be able to see how it all works together in the kitchen!

Not sure about you guys, but watermelon soup with something savory belongs to my upbringing. I'm originally from Iran, and I remember bits and pieces from back in the days when I was growing up in Tehran. Watermelon and cream cheese was one of the things that has been ingrained and stamped into my memory from childhood summer Tehran times... try it out and let me know how you get on!

Cheers to our childhood memoirs!

Asparagus Salad | Botanical

Asparagus-Salad-1

Oh yes, this dish is one of my very favourite recipes! Asparagus, yoghurt, orange zest and all that other summery produce... what more could one ask for?

Don't forget to order your produce in advance, prepare your fermented tree-based cheeses, yoghurts, milks and all the rest of your staples so that they're in the fridge as you need them. As you'll have noticed, I 'm repeating some recipes in order to give you some ideas about what can be done using your pantry staples. I want to show you guys how you can potentially change your patterns. So stay with me, cook with me and - most importantly - give me some feedback so that I know I'm on the right track...after all, we're here for you!

Since we've covered some basic staples over the past month, it's now time to put them to use! Last week we talked about fermented tree-based cream... now you have a chance to use it in this gorgeous risotto recipe.

If you have the time, please do make the glazed red onions which go with the recipe. They add a great depth of flavour. In a pinch, however, it'll be fine without!
